Spiced Chickpeas with Mushrooms

Final recipe. Yummy!

In my attempt to broaden my wholefoods-plant based recipe bank, I have been trying random recipes that appear to be palate pleasing. I am also trying foods I have never eaten or rarely eat. So, I found this recipe with chickpeas and mushrooms! It was on the website:  runningonrealfood.com. It is called Spiced Chickpeas with Mushroom and Garlic.

It was delicious! I used canned chickpeas instead of dried, so I didn’t cook them any prior to completing the recipe. Ooops! The chickpeas really needed to cook some. It caused the mushrooms to be a little overcooked, but I managed. The taste of the garlic, onion, and seasonings was the best. I ate it alone, but I am thinking some brown rice and greens would be awesome with this dish. This dish will work alone or as aside. It will definitely remain in my bank of recipes.
